On the milk package, it is written that pasteurized milk. But what exactly it is meaning of this. Actually, the process of pasteurization means the food or liquid is treated with heat and cooled so that it is fit for consumption and also shelf life is extended. In this guide, we will tell you exactly what the label of pasteurization means.

Pasteurization is the process in which food or liquid is heated at a very high temperature for a certain time period. This is done to kill the bacteria ‘pathogens’ which are found in raw milk. These are microorganism which is not safe for health as they make us sick. The raw milk has different pathogens like Salmonella, Listeria, Campylobacter, E. coli O157: H7, and many other bacteria.

It was first discovered in 1984 by Louis Pasteur and this was used with milk in 1920. by 1950, the method of pasteurization was considered as the safety practice while producing the milk and other dairy products in the dairy plants.

What are the methods of Pasteurization?

Well, there are 2 methods for pasteurizing the milk which is the batch method and the H.T.S.T method.

  • In H.T.S.T (High-Temperature Short Time) the milk is heated at 72 Degree Celsius for around 15 seconds and then immediately it is cooled.
  • In the batch method, at 63 degrees the milk is heated for half an hour and then immediately cooling process starts.

How pasteurizing the milk is helpful?

At the milk plant, the installation of a milk pasteurization plant is very essential. Bacteria from soil, manure, udders, or milking machines can infect the milk which can make the human ill.

  • The pathogen is found in animals naturally which can be transmitted to humans when they consume the unpasteurized raw milk.
  • The bacteria named Listeria is also found in unpasteurized raw milk which increases the risk of miscarriage or fetal issue in pregnant women.

What effect does Pasteurization leave on Milk Nutrition?

  • When the milk is pasteurized its nutrition level is not affected. Studies have shown that minerals, Fat content, protein digestibility, and protein content are not affected by pasteurization.
  • The most essential Vitamin in milk is Vitamin B and with heat, they are very stable. But Vitamin C is not stable under heat. A study has shown that it decreases by 15 to 16 percent when the milk is pasteurized. But, the decrease in Vitamin C is not essential. So, means even 15% decrease won’t affect it for consumption.

Myth: Pasteurized vs. Raw Milk

Many myths have been associated with pasteurization due to which people think that raw milk is safe as compared to pasteurized milk.

  • Myth: One of the myths is that pasteurized milk increases the risk of lactose intolerance whereas raw milk does not result in this.

Truth: Both pasteurized milk & raw milk have lactose. It means if your body lacks the enzyme which breaks down the lactose will make you intolerant to lactose, no matter which milk you consume.

  • Myth: The raw milk have essential probiotics but pasteurization destroys them.

Truth: The probiotics which humans need to consume need to be of human origin. But the one which is found in milk is unhygienic. According to the FDA, it has been proved that raw milk is not helpful in preventing osteoporosis as pasteurization does not alter the level of calcium in the milk.
